A Limited Edition of this highly popular 35 Year Old Single Estate Cognac with flavours of candied fruit, walnut and cacao. - Aroma:
- Cedar wood, dried fruit and vanilla.
- Ageing:
- Aged in French oak from Limousin and Tronçais forests.
- Distillation:
- Bertrand use a pair of 25 hltr stills. The still heads are tulip shape thus preventing an excess of rectification. Cognacs are distilled close to the legal maximum of 72 degrees.
- Flavour:
- Candied fruit, walnut and cacao.
- Grape Variety:
- Ugni Blanc and Colombard.
- Reduction & Strength:
- Gradual reduction with distilled water over several years.
- Viticulture:
- Chalky, thin soils give way to high limestone content from the surface down. Montmorillonite clay provides good structure and water reserve.
