Castarède’s armagnacs are aged in the traditional way, in oak barrels made by local artisans. First they are stored in new oak barrels, just until the optimal dissolution of the components in the wood has taken place. Then the eau de vie is transferred into older oak barrels for slower ageing. The alchemy between the oak barrel, the cellar master’s work and the cellar, gives each armagnac its individual identity.

- Ageing:
- All Castarede armagnacs are well aged in oak casks to provide the maximum tannins. The cellars are next to the Baise ensuring that they are always damp and providing the best conditions for these fine armagnacs.

- Single distillation at around 58 – 60 degrees providing more complex aromas and taste

- A balance of dried flavours including kumquat, green walnut and fig as well as celery and mint

- The climate is soft and humid with sunny autumns and the soil is made of siliceous clay which is poor in lime, giving Bas Armagnacs a lightness and fragrance with subtle tastes
