This remarkable Hermitage Paradis 1887 Cognac was produced by the House of Guiziet. Situated just outside Segonzac, on the road to Barbezieux, it stands on the Cognacian chalk slopes where the vines can penetrate up to thirty metres. At the time, the estate was about 7 hectares in size but, as was commonplace at the time, only produced about 3000 litres of wine from its Folle Blanche grapes. Once distilled, the ensuing spirit was kept in oak casks in a fairly large cellar with clay floors – ideal for slowly maturing it into fine cognac. Having aged for about 75 years, this cognac was removed from its oak casks and placed into bonbonnes. Very long barrel ageing has created a beautifully balanced cognac, together with an intense chocolate brown / deep scarlet colour and depth of flavours.

- Aroma:
- Aromas of ripe bananas, dark toast, truffle, cloves and roasted chestnuts help to define the initial qualities of the rancio.
- Ageing:
- Kept in oak casks in a fairly large cellar with clay floors - ideal for slowly maturing it into fine cognac - it was aged for about 75 years before being placed into bonbonnes.
- Flavour:
- On the palate there is dark toast, gingerbread, liquorice, cinnamon, roasted chestnuts and toffee, which together provide a long finish.

- This cognac is completely natural, there has been no reduction.
- Viticulture:
- Although there are several relatively flat areas in Grande Champagne most of the cru is covered with rolling hills probably not exceeding 150 metres. The soil comprises Cognacian and Santonian chalk, ideal for the vine roots which can penetrate as much as 30 metres into the underground streams which run through the fissures in the chalk.
