Thirty years of oak ageing ensures this cognac has far more intense flavour and complexity than the big commercial blends.  It has a rich nutty, spice and coffee flavour with mature pineapple background.

Additional Information

Aroma:
A high level of complexity with mocha, rich toffee on the nose with roasted walnuts. There are some sweet spice aromas and just a hint of pineapple.
Ageing:
Aged in 350 litre casks, initially in new ones (for 6 to 8 months) and then in old Limousin casks. Cellars are medium damp with natural floors.
Distillation:
Distillation is on the traditional Charentais still with a relatively straight sided still head which minimizes rectification. This together with fairly heavy lees enables maximum wine flavours. The producer does not have to rely on negoçiant sales so has been able to concentrate on the Hermitage style.
Flavour:
Rich nutty, spice and coffee flavour with mature pineapple background.
Grape Variety:
Mainly Ugni Blanc but some Folle Blanche is also used in this cognac.
Reduction & Strength:
This cognac is reduced in strength and matured in newer casks with some added wood chips to increase the reaction of wood with the natural tannins. Reduction at this level takes nearly four years to complete.
Viticulture:
The soil here is flatter than that around Segonzac and the Conacian chalk is similar to that on which the town of Cognac is built. The climate is not extreme with only nominal extremes of hot and cold with relatively low rain fall.
