On a recent visit to the Cognac region it was something of a shock to find a cellar with some vintages from the last quarter of the 19th century. One of them was the 1893, regarded by many as one of the finest vintages to come from this important period. Very long barrel ageing has created an exceptionally long and dry rancio, together with an intense colour and depth and range of flavours.

- Aroma:
- Mushroom with saffron and ginger, cedar and sultanas.
- Ageing:
- Aged in small oak casks no more than 250 litres in size.
- Distillation:
- In a still with quite a narrow head.
- Flavour:
- Saffron combines with crystallised orange and toffee brittle. Hints of fresh dough with mangosteen, lychee and a host of mixed spices.
