One of Dupont’s very finest, this wonderful calva has deep richness and cooked apple flavours. The apples were mixed, crushed and pressed before being fermented to make cider. This was double distilled 6 months later and then aged in a toasted 400 litre (88 imp gallon) oak barrel.

- Aroma:
- Gentle and without aggressiveness. Aromas of wood and spices dominate. Finishes with fruity notes.
- Ageing:
- Since 1972, in oak vat and in a toasted 400 litre (88 imp gallon) oak barrel. Bottled to order.
- Distillation:
- Cidre distilled in the same manner as cognac
- Flavour:
- Very intense crystallized flavours, woody and spicy. Beautiful balance of bitterness and freshness. The finale is supported by hints of tobacco.
- Grape Variety:
- Not a grape but Cidre made from apples and perry pear. The bitter/sweet apples are mainly picked and crushed in a membrane press to get the flavour from the skins. There are several varieties including Saint Martin, Noel des Champs, Mettais and Doux Normandie. The apples are small with high aromatic intensity. Perry pear is used to create added acidity for distillation
