- Light apple and fruit aromas with a slightly musty and lingering finish indicating long ageing in oak
- Ageing:
- Aged in oak in damp cellars
- Distillation:
- We believe this to have been made on a mobile Normandy travelling still. It would have been distilled relatively slowly
- Flavour:
- A faint musty hint of dried apple provides a delicate flavour for this smooth AOC calvados.
- Grape Variety:
- Not a grape but cidre made from apples and perry pear. The bitter/sweet apples are mainly picked and crushed in a membrane press to get the flavour from the skins. There are several varieties including Saint Martin, Noel des Champs, Mettais and Doux Normandie. The apples are small with high aromatic intensity
- Viticulture:
- The mild and damp weather and clayed soil of the region provide ideal growing conditions for apple trees
