This Torcolato Grappa is made from the pomace of “passito” Vespaiolo grapes, the same grape as those used in Fausto Maculan’s famous Torcolato dessert wine. During the drying process the grapes are attacked by ‘noble rot’ which creates compounds that concentrate the flavours and add depth and complexity to the grappa.

- Aroma:
- Raisins, prunes, apricots and dry figs.
- Ageing:
- Aged for at least 12 months in stainless steel vessels.
- Distillation:
- Distilled using copper pot stills at the time of the grape harvest.
- Flavour:
- Flavours ranging from dates and dried figs to honey and sweet spice, the depth is rich and persistent with a sweet taste at first but spice and savoury flavours through the finish.

- The final distillate, at 75% abv, is lowered to 40% abv with the addition of distilled water.
