Additional Information
- Aroma:
- The nose is wonderful with a magical aroma of candied lime, cinnamon, melon, peach and freesias.
- Ageing:
- Old 300 litre oak barrels for 72 years and in Vats for 12 years. It is currently in 30ltr glass bonbons sealed with wax. Kept in very damp cellars
- Distillation:
- In old 5hl pot stills at around 70%. These stills are about the smallest available which normally makes very fine spirit. This was almost certainly distilled on its Lees
- Flavour:
- This has an oaky and nut complexity on initial taste with powerful tones. The complexity shows with dried orange and roasted chestnuts but the tail comes clean with grapefruit
- Grape Variety:
- Ugni Blanc
- Reduction & Strength:
- We do not believe that this has been reduced
- Viticulture:
- The area is slightly hilly and with chalky substrate allowing the vine roots to penetrate for a great distance. Some vines can be as old as a hundred years
