For most cognacs 47% alcohol is very strong but cognacs made on the 12 hectolitre still at Chez Richon balance so much more easily with the strength accentuating the flavour. There is dried mango, saffron, macadamia nuts, sultana and toffee brittle with the characteristic Grande Champagne finish of citrus fruit peel.

Aroma:
Cherry wood, Cinnamon, roasted walnuts, cloves and Muscat grapes
Ageing:
Aged in 250 litre casks in cellars which are reasonably damp. It spent 6 months in new oak before being transferred to old oak barrels where it still resides.
Distillation:
Made on a small 12 hl still where distillation was on the lees.
Flavour:
The high strength of this cognac accentuates the delightful flavours of dried mango, saffron, sultana, macadamia nuts and toffee. This has a long finish of kumquats and grapefruit peel.

Reduction & Strength:
The cognac is sold at 47% and has been reduced with distilled water over a period of several years.
Viticulture:
This is an area of gentle slopes with very porous chalk in several layers, predominantly of the Coniaçian variety, allowing the vine roots to penetrate to a deep level.
