- Aroma:
- The aroma of luxury cognac is to be savoured. This has a wonderful aroma of molasses, bitter chocolate, cardamom spice and ripe cherries.
- Ageing:
- This Petite Champagne cognac has been aged in relatively damp cellars which help to prevent the barrels from becoming too dry. The dampness keeps the spirit in contact with the natural tannins in the oak for longer and evaporation is very slow. This cognac has been aged for over 30 years.
- Distillation:
- Cognacs are always double distilled in stills known as Charentais Alembics
- Flavour:
- As with all good cognacs the flavours are complex. A rich flavour of chocolate and natural toffee combines with mature Muscat grapes to provide a soft, smooth cognac with very moreish qualities.
- Grape Variety:
- Ugni Blanc
- Reduction & Strength:
- Petite Champagne cognacs mature marginally quicker than those from neighbouring Grande Champagne. Some very gradual reduction has taken place, over the period of a year, to ensure that this cognac is sold at its best strength.
- Viticulture:
- Relatively poor soil is ideal for growing cognac vines as their roots are forced to grow deep into the ground seeking water. The porous chalk layers found on these gentle slopes are some of the best for growing vines in Petite Champagne.
