A good cognac with lots of rich nutty qualities. It is a good example of what can be achieved from the smallest of the crus.

- Aroma:
- Burnt sugar, sultanas and walnuts
- Distillation:
- We have not seen their stills but are told they are quite small (12-15 hltrs) with onion type heads
- Flavour:
- Raisins, plums and butterscotch. This is a magnificent cognac with character and depth of flavour but without any harshness. A ladies cognac.
- Grape Variety:
- Ugni Blanc, Colombard
- Reduction & Strength:
- 40% abv. Very little reduction required but distilled water is used in small quantities.
- Viticulture:
- The Borderies produce some of the nuttiest cognacs often with toffee flavours. The soil is good but regrettably most of the stock goes to the big negociants. This firm is independent.
